This is another version of saving and preserving tomatoes. Dried tomatoes are really good addition to sandwiches, pasta and to a lot of dishes. This recipe is from Mario Batali’s “Molto Italiano” cookbook and I just loved it!!!
Oven-Dried Tomatoes
Ingredients
- 4 lbs ripe Plum Tomatoes
- 3 tbsps Kosher Salt
- 3 tbsps Sugar
Cooking Directions
- Preheat oven to 150F.
- Slice the tomatoes lengthwise in half and place cut side up on baking sheets. Combine the salt and sugar and sprinkle a little it over tomatoes.
- Place in the oven and cook slowly for 10 hours.

transferred to a cooling rack and put back for a little longer in the oven to make it a little drier
I did all of these before going to bed and by morning, I have oven-dried tomatoes.

i will definitely do this! sun dried tomatoes are very expensive! this will do i’m sure
Stupid question…how do you keep these? Just throw them in the freezer afterwards or seal them (dry)?
@Dudut: Oh yes, definitely! They taste very good
@J: very good question. Yes you can put them in the fridge or freezer.
What I did in this batch is pour olive oil in the container with the tomatoes and put in the fridge.
